Lettuce Salad with Raspberries and Mint
Rinse lettuce, spin dry, trim and tear into bite-size pieces. Rinse raspberries. Cut ham into strips.
Mix double cream in a bowl with lime juice and season with 1 pinch of salt and sugar. Chop pickled green pepper into small pieces, add to the bowl and mix.
Mix lettuce with mint leaves in a bowl. Cover with raspberries and ham and drizzle with double cream mixture. Mix, arrange on plates and serve.
