- 3 Tbsps olive oil
- 1 onion (chopped)
- 1 garlic clove (crushed)
- ¾ cup white breadcrumbs
- 6 Tbsps fresh Basil (chopped)
- 3 lemons (finely grated zest of 2, juice of 3)
- 18 ozs turkey breasts
- 2 tsps Poultry seasoning
Preparation steps

Heat the oven to 200°C (180°C fan) 400°F gas 6. To make the stuffing, heat 2tbsp of olive oil in a skillet and add the onions and garlic, cook gently for 5 minutes to soften but not brown.

Add the breadcrumbs with the lemon zest, stir for a couple of minutes. Season, add the juice of 2 lemons and the basil. Cool.

To stuff the turkey lay a large sheet of foil on a chopping board, Arrange 10 x 6" lengths of string horizontally across the foil.

Position the turkey breast in the centre, lengthways. Cut a deep slash down the centre of the turkey breast, along it’s length.

Spoon the stuffing into this pocket. Wrap the meat and stuffing and tie up at 3/4" intervals with the string to secure.

Keep tying the joint until you get to the end. Sprinkle with the poultry seasoning and season with salt and ground black pepper and squeeze over the juice of the other lemon. Wrap tightly in foil and put into a roasting pan.
7.
Roast for 1 hour 20 minutes. Cool completely, then chill for at least 5 hours. Slice to serve.
