1 onion
2 garlic cloves
3 Tbsps olive oil
1 ¾ cups Risotto
1 cup dry white wine
1 lemon (juice and zest)
4 cups Chicken broth
1 Tbsp chopped, fresh parsley
3 Tbsps Pine nuts
3 Tbsps fresh, chopped Parmesan
1 Tbsp butter
salt
freshly ground peppers
halved lemons (for garnishing)

Preparation steps

1.
Peel and finely chop the onion and garlic. Saute in a skillet with 3 tbsp of hot oil.
2.
Add the rice and saute briefly. Pour in the wine. Bring the ingredients to a boil quickly. Add the lemon juice and zest and a little broth.
3.
Cook the risotto over medium heat stirring constantly. When the broth is absorbed, add more broth. Continue on until the rice is creamy but still firm (approximately 20 minutes).
4.
To finish: mix the parsley, pine nuts, parmesan cheese and butter into the risotto. Season to taste with salt and pepper. Garnish with the lemons and serve.
