- 1 chicken (1.2 kilgrams)
- 50 grams thyme
- 3 rosemary
- 30 grams Basil
- 15 grams Sage
- salt
- freshly ground peppers
- 1 onion
- 4 garlic cloves
- 2 organic lemons
- 2 Tbsps olive oil
- 2 Tbsps butter
- 100 milliliters dry white wine
- 200 milliliters Chicken broth

Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F).

Rinse the chicken, pat dry and cut into smaller pieces.
3.
Rinse the herbs, shake dry and finely chop. Slide half of the herb mixture underneath the chicken skin. Season with salt and pepper.
4.
Peel and finely chop the onion and garlic. Rinse the lemons in hot water and cut into slices.
5.
In a roasting pan, saute the chicken with the olive oil and butter. Add the onion and garlic, saute briefly and deglaze with the white wine and chicken broth. Sprinkle with the remaining herbs and add the lemon slices. Bake for 40-50 minutes. Serve warm.
