18 ozs small waxy potatoes
16 ozs Green cabbage (1/2 small)
8 ozs button Mushroom
2 Tbsps olive oil
9 ozs Ground beef
salt

Piment d'Espelette
½ tsp dried marjoram
2 bay leaves
34 ozs meat broth
½ bunch parsley
2 Tbsps Wine vinegar

Preparation steps

Peel, wash and halve potatoes or cut into wedges. Clean white cabbage, cut out stalk, and cut leaves into squares of about 1-inch. Clean mushrooms and halve, quarter, or slice depending on size.

In a large saucepan, heat 1 tablespoon oil. Sauté mushrooms in it over medium heat for about 3 minutes. Then remove and set aside. Heat remaining oil in pot. Fry minced meat in it over medium heat for 8 minutes until crumbly. Season with salt and pepper. Add white cabbage, season with 1 pinch of piment d'Espelette and fry for 3-4 minutes.

Add potatoes, marjoram and bay leaves to the pot, pour in broth and simmer everything for about 15 minutes at low heat. Add mushrooms again and simmer for another 3-5 minutes.

Meanwhile, wash parsley, shake dry and chop. Remove bay leaf from stew and stir in vinegar. Season hunter's stew with salt and pepper and sprinkle with parsley.
