Preparation steps

Rinse the tomatoes, score the bottom, and blanch in boiling water until the skin begins to burst. Transfer to an ice water bath, then remove the skin. Cut the tomatoes into quarters, remove the seeds and cores, and finely dice. Press the cores through a fine strainer and collect the juice. Peel and finely chop the onion and garlic.

Heat the oil in a pot. Add the onions and garlic and sauté until translucent. Add the tomato paste, sauté briefly, then add the tomato juice and diced tomatoes. Bring to a boil, stirring occasionally. Reduce the heat, and simmer gently for 15 minutes. Puree the mixture or strain through a sieve. Season to taste with salt, pepper, and sugar.
