3 shallots
2 garlic cloves
1 Parsnip
1 carrot
2 Tbsps olive oil
salt

100 milliliters Red wine
1 tsp sugar
2 sprigs thyme

Preparation steps

1.

Blanch the tomatoes for a few seconds, remove from heat, peel, quarter, core and finely dice. Peel and finely chop the shallots and garlic. Peel and finely grate the carrot and parsnip.

2.

Heat shallot and garlic in oil, then add carrots and parsnip and briefly sauté. Add tomatoes, season with salt, pepper and sugar. Pour in wine, add the thyme to taste and let simmer, covered, over low heat for about 25-30 minutes.

3.

Season more if desired, then remove the thyme.

4.

Serve hot with pasta, as desired.
