Preparation steps

Peel the mango, cut out the flesh from the pit and cut into pieces. Scald the tomatoes in hot water, rinse with cold water, peel, quarter, remove the core and dice. Peel the shallot and garlic, and finely chop.

For the sauce, heat oil in a pan and saute the shallot and garlic until translucent. Add the tomato, mango, apple cider vinegar and honey, and let simmer for about 10 minutes. Puree finely with immersion blender and allow to cool a little.

Rinse the salmon, pat dry and brush with the sauce. Grill the salmon on the oiled grill for about 8 minutes, turning occasionally. Brush the salmon every now and then with some sauce while grilling.

Serve the grilled salmon sprinkle with the remaining sauce.
