35 ozs new potatoes (scrubbed)
2 bunches Asparagus (trimmed and chopped)
4 Tomatoes (quartered)
8 scallions (chopped)
parsley (to garnish)
cup olive oil
2 Tbsps white wine vinegar
2 Tbsps chopped parsley
2 Tbsps chopped mint
sugar

Preparation steps

1.
Steam or boil the potatoes until tender then drain well. Let them cool a little then slice thickly.
2.
Meanwhile, steam or boil the asparagus until just tender then drain well and refresh under cold running water. Pat dry with kitchen paper.
3.
Place the potatoes, asparagus, tomatoes and spring onions in a large bowl and gently mix together. Mix together the olive oil, vinegar, chopped herbs and sugar to make a dressing.
4.
Place the salad into serving bowls and drizzle over the dressing. Serve immediately.
