- 3 Tbsps olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 tsps dried, mixed Fresh herbs
- 2 tins Tomatoes (roughly chopped)
- ½ cup Red wine
- 14 ozs Lasagne noodle (sheets)
- 18 ozs Spinach (roughly chopped)
- 9 ozs Ricotta cheese
- 1 ¾ ozs Parmesan (grated)
- 2 Tbsps chopped parsley

Preparation steps
1.
Heat the oil in a large pan and gently cook the onion and garlic until soft but not brown. Add the herbs, tomatoes and red wine, season with salt and pepper and simmer gently for 20 minutes, stirring from time to time.

Meanwhile, cook the lasagne sheets according to the packet instructions. Place the spinach in a pan with a little water and cook until just wilted. Drain well and squeeze out any excess water.
3.
Layer the lasagne with the tomato sauce and spinach. Serve in warmed dishes with the ricotta spooned over and parmesan and parsley sprinkled on top.
