2 scallions
1 handful Arugula
olive oil (extra-virgin)
apple cider vinegar
2 Tbsps parsley (leaves)
2 Tbsps finely chopped parsley
2 Tbsps finely chopped Basil

5 Tomatoes
250 grams spicy pickled Feta (From the Greek or Turkish delicatessen)

Preparation steps

Trim and separate the lettuce leaves. Rinse and spin dry. Tear leaves into smaller pieces. Rinse arugula and spin dry. Rinse the tomatoes, quarter and cut quarters again crosswise. Rinse scallions, trim and cut into thin rings. Mix 5 tablespoons olive oil with 3 tablespoons apple cider vinegar, finely chopped parsley and basil and purée with an immersion blender. Season with salt and pepper.

Mix green leaf lettuce with arugula, tomatoes and scallions in a bowl. Mix in the salad dressing. Season with salt and pepper and season with a little more vinegar, if needed. Arrange the salad in a serving bowl and top with feta cheese (drizzling with the cheese marinade). Sprinkle with parsley leaves and serve immediately. Serve with fresh flatbread, if desired.
