Green Salad with Lentils and Celery
Rinse apple, cut into quarters (cutting a few slices for garnish and sprinkling with a little lemon juice), remove seeds and dice finely. Peel shallot and dice. Mix vinegar with apple juice and oil and season with salt, cayenne pepper and turmeric. Add apple and shallots and mix well.
Cook lentils in salted water for 6-8 minutes. Drain well. Trim celery, rinse and finely chop. Rinse lettuce, spin dry and tear into bite-sized pieces.
Mix lentils and celery with the apple dressing. Marinate 20 minutes. Loosely fold in lettuce and serve garnished with apple slices.
