Celery and Pear Salad with Lentils
Combine lentils with 200 ml (approximately 3/4 cup) cold water in a pot. Bring to a boil, then cover and simmer over low heat, 20-25 minutes. Drain lentils. Mix lentils with 1 tablespoon apple cider vinegar and a pinch of salt. Let cool slightly.
Peel and finely grate celery root. Rinse pear, cut in half lengthwise, remove core and cut into thin slices. Rinse lettuce leaves, shake dry and place 2 leaves on each of 4 plates. Combine celery root with pear and lentils and divide over lettuce leaves.
Whisk orange oil with 1 tablespoon apple cider vinegar, mustard and marjoram. Season to taste and drizzle over salad. Serve salad sprinkled with chives.
