- 9 ozs Green Pea Penne (made from green peas)
- 3 ozs Arugula
- 5 Tbsps pitted black olives
- 4 ozs Mozzarella
- 2 Tbsps olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp Aglio-e-olio spice mix (garlic olive oil mix)
- peppers
- ground paprika
- 2 Tbsps Mixed nuts

Preparation steps
1.
Bring 2 litres of water to the boil, add salt and cook penne of peas for 6 minutes. Then drain, drain and let it cool down.

In the meantime, clean, wash and shake dry the rocket. Cut olives into slices. Drain mozzarella and cut into cubes.
3.
Mix olive oil, vinegar, salt, Aglio-e-Olio, pepper and paprika powder to a dressing. Add some more water as desired.
4.
Mix the penne with arugula salad, sprinkle with olives, mozzarella cheese, and seed mixture and sprinkle with the dressing.
