1 Rinse grapes, drain in a sieve, pluck from stems and cut in half.
2 Peel kiwis and cut into slices.
3 Rinse pears, cut into quarters, remove seeds and cut into wedges.
4 Cut melon. Remove seeds with a teaspoon, cut into slices and remove rind.
5 Peel ginger and finely chop. Break cinnamon stick into 4 small pieces.
6 Cut parchment paper into 4 pieces, each approximately 35 x 25 cm (approximately 14 x 10 inches).
7 Divide grapes, kiwis, pears, melon and ginger into 4 portions and place 1 portion in the middle of each piece of parchment paper.
8 Top each packet with 1 piece of cinnamon stick, 1 cardamom pod and 1 tablespoon maple syrup.
9 Fold parchment paper to seal packets.
10 Bake in preheated oven at 180°C (fan 160°C, gas mark 2-3) (approximately 350°F convection 325°F) about 15-20 minutes. Place on plates, open packets and serve.
