1 ½ kilograms green Asparagus
salt
1 handful Wild garlic
2 Tbsps Caper
1 small red onion
4 Tbsps sunflower oil
4 Tbsps apple cider vinegar
freshly ground peppers
1 pinch sugar

Preparation steps

1.

Rinse the asparagus. Trim off the bottom third of the stalks and save for another use. Blanch the remaining asparagus in boiling salted water for 5 minutes, until al dente. Remove from the water and drain well.

Rinse, dry, and chiffonade the wild garlic.

3.

For the dressing, thoroughly drain the capers. Peel and julienne the onion. Mix the capers and onions with the oil and vinegar. Season to taste with salt, pepper, and sugar. 

4.

Place the asparagus on plates and top with the dressing. Garnish with the wild garlic, and serve.
