6 Tbsps extra virgin olive oil
80 grams toasted Pine nuts
3 Tbsps white balsamic vinegar
Parmesan

Preparation steps

Peel the bottom end of the asparagus, and trim away any woody parts. Blanch for 3 minutes in boiling salted water. Preheat the grill (charcoal or electric). Remove the asparagus from the water and shock in an ice water bath. Remove the asparagus from the water bath and pat dry. Brush with olive oil and place on the grill. Cook for 3-5 minutes, turning occasionally.

Mix 6 tablespoons of olive oil and the balsamic vinegar to form a vinaigrette. Season to taste with salt and pepper. Remove the asparagus from the grill and arrange on a plate. Drizzle with the vinaigrette and sprinkle with the pine nuts. Top with the parmigiano reggiano and serve with toasted white bread.
