Preparation steps

1.

Cut the peel away from the grapefruit, making sure to get all of the white pith off. Cut the flesh away from the inner membranes. Collect the juice in a bowl, and squeeze the membrane. Peel, halve and thinly slice the onion.

Zest the orange and juice the lemon. In a bowl, mix the grapefruit juice with the lemon juice. Whisk in finely chopped garlic, olive oil, mustard, salt, and pepper. Rinse watercress and shake dry.

3.

Spread watercress on a flat dish. Fan out the grapefruit segments in a circle. Top with the onion strips.

To serve: Drizzle with the dressing and let sit 10 minutes before serving.
