- 4 cups mixed Wild mushroom
- salt
- peppers
- 4 medium eggs
Preparation steps
1.
Heat the butter in a pan and when foaming, add the mushrooms.
2.
Cook until tender and any excess moisture has evaporated. Season and keep warm.
3.
Poach the eggs in steadily simmering water for about 3 minutes for a runny yolk. Remove to kitchen paper and leave to drain.
4.
Serve the egg on a bed of mushrooms.
