- 12 Scallop (with roe attached)
- 0.333 cup sunflower oil
- 2 Plum tomato (finely diced)
- ⅞ cup dry white wine
- ½ Lime (juiced)
- salt
- peppers
- 1 Tbsp Tarragon (finely chopped)
Preparation steps
1.
Heat the oil in a large frying pan over a medium-high heat for 1-2 minutes until hot.

Pan fry the scallops turning occasionally until golden for 1-2 minutes. Add the white wine and allow to reduce by half.
3.
Stir in the tomatoes and lime juice and heat through. Remove from the heat, season to taste and add the tarragon and stir well.
4.
Transfer to serving dishes. Serve immediately.
