- 1 tsp mustard powder
- 1 Lime (juice & finely grated zest)
- 1 lemon (juice)
- Sea salt
- freshly ground Black pepper
- 1 cup extra virgin olive oil
- To garnish
- snipped Chives
- Lime wedge

Preparation steps
1.
Heat the oven to 160°C (140° fan) 325°F gas 3.
2.
Wrap the lobster claws in foil and put in the oven for about 5 minutes until heated through.
3.
Whisk together the egg, mustard, zest and juice. Season with salt and pepper.
4.
Trickle in the oil slowly, whisking constantly until thick and smooth.
5.
Place the lobster in serving dishes with a spoonful of the lime dressing. Sprinkle with chives and garnish with lime wedges.
