Soften the gelatine in cold water.
Mix together the coconut milk, cream, lemongrass, lime juice and sugar and heat in a pot. Remove from the heat and sieve into another pot. Wring out the gelatine and dissolve in the coconut cream.
Transfer the mixture into glasses or moulds and chill for 6 hours.
Dip the panna cotta in hot water and carefully knock out onto plates. Drizzle with the coconut water and garnish with the pomegranate seeds and the desiccated coconut.
