- 2 tablespoons sugar
- 1 ⅛ cups Mango puree
- 1 cup fresh squeezed Orange juice
- 1 teaspoon Cardamom powder
- 6 sheets gelatin
- 16 green Grape (pitted or seedless, halved)
- ⅞ cup cream (whipped)
- Orange zest (unwaxed orange)
Preparation steps
1.
Place the sugar in a pot with 50 ml water and bring to the boil. Remove from the heat and leave to cool slightly.
2.
Mix together the mango puree, orange juice, cardamom and the syrup.
3.
Soften the gelatine in water and then transfer to a pot and dissolve over a medium heat - do not allow to boil. Leave to cool slightly and then stir in 2-3 tbsp of the mango-orange mixture. Transfer to the remaining mango-orange mixture and pour into glasses.
4.
Add the grapes and leave to set in the fridge.
5.
Serve garnished with the cream and orange zest.
