Gluten Free Spiced Hazelnut Cookies
- ¾ cup butter
- ¾ cup sugar
- 1 pinch salt
- 2 eggs
- 2 teaspoons Rum
- 1 ¼ cups Gluten-free flour
- ⅔ cup hazelnut flour
- 1 teaspoon Baking powder
- 2 teaspoons ground cinnamon
Heat the oven to 180°C (160°C fan ), 350°F, gas 4 and line a baking tray with non-stick baking paper.
Mix together the butter, sugar and salt until creamy. Gradually stir in the eggs and the rum.
Mix together the flour, hazelnuts, baking powder and cinnamon and fold into the egg mixture. Stir well to create a smooth dough.
Shape the dough into small balls (approx. 2cm|1" diameter) flatten a little and place on the baking tray.
To coat: mix together the cinnamon and sugar and sprinkle over the cookies. Bake for about 15 minutes until golden brown. Cool on the trays for a few minutes, then place on a wire rack to cool completely.
