- ½ cup gluten-free all purpose flour (plus extra for dusting)
- ½ cup powdered sugar
- 1 cup hazelnut flour
- 1 pinch salt
- 6 egg whites
- ½ cup sugar
- 6 Tbsps unsalted butter (melted)
- To decorate
- roasted Hazelnuts
- powdered sugar

Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Grease a 20cm|8" cake tin and dust lightly with flour
2.
Sift together the flour, icing sugar, ground hazelnuts and salt into a mixing bowl. Mix well.
3.
Whisk the egg whites for few minutes then add the sugar,1 tablespoon at a time, whisking constantly until soft peaks form.
4.
Combine the egg white mixture gently with the dry ingredients. Add the butter and gently mix.
5.
Pour into the tin and bake for 25-30 minutes until firm. Cool in the tin for 20 minutes, then place on a wire rack to cool competely.
6.
Pile the hazelnuts in the centre and sift icing sugar over the top.
