Gluten Free Christmas Nut Cookies
- 2 cups hazelnut flour
- ⅔ cup superfine caster sugar
- 2 egg whites
- powdered sugar (for dusting)
Heat the oven to 170°C (150° fan) 325°F gas 3. Line 2 baking trays with non-stick baking paper.
Mix together the hazelnuts and sugar.
Whisk the egg whites until stiff, but not dry and gradually stir into the hazelnut mixture until blended.
Take tablespoons of the mixture and roll into little logs. Place on the baking trays and bend into crescents.
Bake for 12-15 minutes until pale golden. Sift a thick layer of icing sugar over the crescents, while still hot. Leave to cool.
