Ginger Shrimp and Pasta Bowl
- 14 ozs Spaghetti
- 2 Tbsps Oil
- fresh ginger (peeled and finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 4 scallions (finely sliced)
- 16 ozs shrimp (shelled)
- 2 cups frozen peas (thawed)
- ½ cup fish stock
- 2 Tbsps lemon juice

Cook the spaghetti according to the packet instructions. When it is cooked, drain well and refresh under cold running water.
Meanwhile, reserve a few sprigs of coriander for the garnish and finely chop the rest.
Heat the oil in a large pan. Add the ginger and garlic, fry for 2 minutes then add the spring onions.
Stir fry for 2 minutes then add the prawns, fry for 1 minute then add the peas and the fish stock.
Let bubble then season with salt, pepper and lemon juice and stir in the spaghetti and the chopped coriander. Heat through and serve garnished with the reserved coriander sprigs.
