Fruity Endive Salad with Yogurt Dressing and Pumpkin Seeds
Remove outer endive leaves, if necessary. Halve, rinse and spin dry.
Peel oranges with a sharp knife removing all white pith, then cut out segments, collecting the juice. Squeeze membranes to collect the remaining juice.
Rinse apples, cut in half, remove seeds and cut into slices. Sprinkle with lemon juice.
Stir yogurt with orange juice and season with salt and pepper.
Arrange endive on plates and distribute orange segments and apple slices over the top. Drizzle the yogurt dressing over fruit. Serve sprinkled with pumpkin seeds.
