Preparation steps

1.

Toast the pistachios in a dry skillet, then let cool and chop. Peel the grapefruit and separate the segments. Reserve the juice. Peel the avocados, cut in half, remove the pit and dice.

Rinse the chile, trim, remove seeds and finely chop. Peel the shallot and cut into rings.

3.

Mix the vinegar with the grapefruit segments, grapefruit juice and oil. Season with salt and pepper. Add the chile and shallot. Rinse the alfalfa sprouts and shake dry.

4.

Mix the salad ingredients with the dressing and the alfalfa sprouts. Sprinkle with pistachios and serve.
