7 ozs lamb's lettuce
2 ozs cooked shrimp (ready to eat)
2 slices white bread
1 Tbsp butter
3 Tbsps White vinegar
1 pinch sugar
½ tsp Mustard

Preparation steps

1.

Cut grapefruit into segments, collecting and saving juice. Peel, halve and pit avocados. Cut avocados into slices and immediately sprinkle with lemon juice.

Rinse and trim lettuce and spin dry.

3.

For the croutons, cut bread into cubes and sauté in butter.

4.

For the dressing, mix vinegar, sugar, mustard and oil and season to taste with salt and pepper.

5.

To assemble salad, mix lettuce, grapefruit, avocado and shrimp and drizzle with dressing. Sprinkle salad with croutons to serve.
