2 tsps Agave syrup (or honey)
2 Tbsps olive oil

Preparation steps

1.

Cook quinoa in twice the amount of boiling salted water for about 20 minutes, drain and let cool for 10 minutes.

Meanwhile, peel grapefruits with a knife until thick enough to remove the white inner skin as well.

3.

Cut out grapefruit fillets between the separating skins, collecting the dripping juice. Mix juice with mustard, honey and oil, season with salt and pepper.

4.

Cut cress from the bed. Clean the spring onions, wash and cut diagonally into rings. Cut avocado in half, pit, lift flesh from shell and cut into slices.

5.

Mix all prepared salad ingredients with the dressing and arrange on plates.
