2 large carrots (peeled)
1 Mango (flesh cut from stone)
cup Orange juice
To garnish
1 Celery (sticks)
4 Walnut

Preparation steps

1.
Grate the carrots and put into a bowl with 300ml/1 1/4 cups cold water. Cover and leave for 20 minutes.
2.
Score the mango flesh and remove from the skin, then put into a blender with the orange juice.
3.
Whiz together to combine.
4.
Hold a sieve over the blender and strain the carrot juice into the blender, discarding the carrots. Whiz again to combine.
5.
Pour into 2 glasses, add 2 pieces of celery and a couple of walnuts.
