Fried Potato Wedges

Potatoes rich in starch provide a lot of energy and are therefore the perfect side dish. The breadcrumbs make the fried potato wedges nice and crispy and uniquely delicious.
Serve the deep-fried potato wedges, for example, with a fresh leaf salad or with delicious seasonal oven vegetables.

- 1 kilogram starchy potatoes
- Vegetable fat (for frying)
- 1 egg white
- 60 grams breadcrumbs
- 1 tsp sweet ground paprika
- salt
- freshly ground peppers
Preparation steps
Rinse the potatoes thoroughly and then cut into wedges.
Preheat the frying oil to 120°C (approximately 250ºF).
Part-cook the potato wedges in portions for about 4 minutes. Drain and allow to cool completely.
Whisk the egg. Season the breadcrumbs with paprika, salt and pepper.
Dip the potatoes in the egg and turn in the breadcrumbs.
Increase the oil temperature to 180°C (approximately 350ºF) and fry the wedges for 3-4 minutes until golden brown.
Remove and drain before serving.
