1 ½ kilograms waxy potatoes
salt
2 Tbsps Pastry flour
vegetable oil (for frying)
coarse Sea salt
½ tsp ground paprika

Preparation steps

1.

Scrub and rinse the potatoes thoroughly, cut lengthwise into wedges and blanch in salted water for 6 - 8 minutes. Drain and allow to cool slightly. Pat dry with paper towel and sprinkle with flour.

2.

Heat the vegetable oil in a deep fryer to 170°C (approximately 340°F) and fry the potato wedges for 3 - 4 minutes until golden brown. Drain well on paper towels and season with salt and paprika. Serve to taste with ketchup.
