2 large yellow onion (600 grams)
80 grams cornstarch (or rice flour)
2 tsps Baking powder
1 egg white
3 Tbsps scallions
vegetable oil (for frying)

Preparation steps

1.

Peel onions and cut into rings.

Mix cornstarch or rice flour in a bowl with baking powder and 80 ml (approximately 3 ounces) of cold water until smooth.

3.

Beat egg whites in a bowl until stiff, add chives to the bowl and fold in.

4.

Heat oil in a saucepan or deep fryer to 180°C (approximately 350°F). Pull onion rings through the batter and fry in portions in the oil until crispy. Remove from the oil with a slotted spoon and drain on paper towels. Serve while hot.
