2 large yellow onion each about 400 grams (approximately 14 ounces)
500 milliliters Buttermilk
1 Tbsp sweet ground paprika
½ tsp cayenne pepper
200 grams Pastry flour
4 Tbsps Mayonnaise
3 Tbsps Yogurt (0.1% fat)
2 Tbsps lemon juice
2 garlic cloves
2 Tbsps parsley
1 Tbsp scallions
salt
freshly ground peppers
vegetable oil (for frying)

Preparation steps

Peel the onions and cut into 2 cm (approximately 1 inch) wide rings. Stir the onion rings into the buttermilk and let rest for about 1 hour.

Mix the paprika and cayenne with the flour.

Mix the mayonnaise with the yogurt and lemon juice until smooth. Peel the garlic, squeeze through a garlic press and add to the mayonnaise mixture. Add the parsley and chives to the mayonnaise and season with salt and pepper.

Drain the onion rings in a colander. Heat the oil in a saucepan. (It is hot enough when small blisters form on a wooden spoon (or heat the oil in a deep fryer to 180°C or approximately 350°F). Pull the onion rings through the flour, shake off excess flour and fry until golden brown in the hot oil. Drain briefly on paper towels, then season with salt, spices and pepper.

5.

Serve the deep-fried onion rings with herb-garlic mayonnaise.
