800 grams Squid ring
150 grams Pastry flour
250 milliliters white wine
2 eggs
salt
freshly ground peppers
vegetable oil (for cooking)
chopped parsley (for sprinkling)

Preparation steps

1.

Rinse and pat dry squid. Separate eggs.

Mix flour with white wine until smooth. Add egg yolks, season with salt and pepper. Beat egg whites until stiff and fold into the mixture. Batter should be thick. 

3.

Dip squid rings in batter. Heat oil in a deep pan and cook squid rings, few at a time, for about 2 minutes or until golden brown. Drain on paper towels. Arrange on plates and sprinkle with parsley. Garnish with lemon wedges and serve.
