Flatbread with Carrot Spread
Peel and finely grate carrot. Mix with oil and salt and let simmer over low heat, covered, for about 20 minutes, stirring occasionally until the carrots are soft. If there is too much liquid left in the pot, leave uncovered to let it evaporate a little. Let cool.
Peel and grate garlic, then crush alongwith some salt with the back of a knife to form a paste.
Stir yogurt with garlic paste until smooth, Mix with the almonds, carrots and parsley and serve spread on flatbread.
