2 Oranges
½ tsp brown sugar
4 Tbsps Argan oil
2 Tbsps white apple cider vinegar

Preparation steps

Rinse the fennel, cut in half, remove the core and cut or slice into thin slices. Set the fennel fronds aside for garnish. Peel the oranges with a sharp knife and cut into segments. Squeeze the juice from the remaining pulp and mix with the sugar, oil and vinegar. Season with salt. Drizzle over the fennel then set aside to marinate for 15 minutes.

Peel the onion, cut in half then thinly slice. Mix with the fennel and orange segments, arrange on serving plates and serve garnished with fennel fronds and mint.
