6 Tbsps olive oil
1 handful cilantro
1 handful parsley
½ lemon (juice)
1 tsp Cumin

10 ozs Greek yogurt

Preparation steps

Separate eggs (use egg yolks elsewhere). Put chickpeas in a blender with baking powder, egg whites and 4 tablespoons olive oil. Wash coriander and parsley, shake dry, set aside some coriander leaves, add remaining herbs with lemon juice, cumin and salt to the mixing bowl and blend everything to a fine mass.

Heat a waffle iron, brush with a little oil and gradually bake the mixture into 4 falafel waffles. Cool on a plate or keep warm in the oven as desired.

Peel and chop garlic, mix with yogurt and season with salt and pepper. Wash mint, shake dry, pluck leaves, set aside some, finely chop the rest, add to yogurt and mix. Garnish falafel wafers with 1 blob of mint yogurt and cilantro and mint leaves.
