- 2 handfuls Elderflower
- 1 organic lemon
- 12 ozs sugar
- 2 tsps Citric acid

Preparation steps

Pluck the elderflowers from the stems. Rinse the lemon in hot water, wipe dry, and slice.
Combine the sugar with 4 cups of water in a pot. Gradually, bring to a boil, and then reduce to a simmer. Simmer, while stirring, until the sugar is dissolved, about 10 minutes.

Allow to cool. Stir in the elderflowers and lemon slices. Place in a container and refrigerate, covered, until infused, about 2 days.

Prior to serving, strain the mixture through a cheesecloth-lined strainer into a pot. Stir in the citric acid and bring to a boil. Put the drink in a pitcher and close tightly. Add more sugar if desired. Chill until ready to serve.
