1 ½ ozs honey (4 TBSP.)
½ bunch thyme
17 ozs Sparkling water

Preparation steps

1.

Squeeze juice from 4 lemons and heat together with 17 ounces of water and honey and stir until honey is dissolved. Remove lemon water from heat, let cool, and put in the refrigerator for at least 1 hour.

Meanwhile, rinse the remaining lemons hot, rub dry and cut into slices. Wash the thyme and shake dry.

3.

Divide lemon slices and thyme sprigs among 4 glasses. Add cooled lemon water and fill up with cold sparkling water.
