6 ozs dry white wine
2 garlic cloves
1 tsp lemon juice
8 slices Baguette
2 Tbsps freshly chopped thyme
3 ozs freshly grated Gruyere

Preparation steps

1.

Peel onions and cut into thin rings. Heat oil in a saucepan, fry onions for 10-15 minutes while stirring slowly until soft and season with sugar, salt and pepper. Simmer for another 10 minutes, stirring occasionally, until golden brown.

Add broth and wine to the saucepan, bring to a boil, reduce heat and simmer for another 15 minutes. Peel garlic and squeeze into the soup with a garlic press and season with lemon juice, salt and pepper.

Preheat the oven broiler.

Divide onion soup into 4 ovenproof ramekins (such as ceramic bowls). Place 2 slices of baguette on each ramekin, sprinkle with cheese and thyme and lightly season with freshly ground pepper. Bake for about 5 minutes under the preheated oven broiler, watching carefully, until cheese is melted. Remove from the oven and serve immediately.
