3 Bowls, 1 Hand mixer, 1 Fine-mesh sieve, 1 Parchment paper, 1 Kitchen shears, 1 Springform pan (24 cm Ø), 1 Offset spatula, 1 Wire rack, 1 Small pot, 1 Wooden spoon, 1 Fine grater, 1 Citrus juicer, 1 Whisk, 1 Tablespoon, 1 Teaspoon, 1 Large knife
Preparation steps
1.
Put the strawberries into a pan and cook very gently for 2-4 minutes until the juices start to run but the fruit has not disintegrated.
2.
Put the fruit and the juices into a food processor and blend to a puree. Push through a nylon sieve to extract the seeds. The puree will be very thick. Sweeten to taste.
3.
Spoon into 4-6 serving glasses and chill until ready to serve.
4.
Place the ratafia biscuits and strawberry halves on top and spoon on a little yoghurt.
