4 corn cobs
12 scallions
2 eggs
2 ¾ ozs Buttermilk
6 ¾ ozs Whole Grain Spelt Flour
½ tsp Baking powder

1 Tbsp Raw cane sugar
4 Tbsps white balsamic vinegar
6 Tbsps olive oil

Preparation steps

1.

Clean the corn, wash and rub dry. Grill corn on the cob in a grill pan or on the grill, turning, for about 10 minutes over medium heat. Then cut the kernels from the cob with a knife and place in a bowl.

Clean 4 of the spring onions, wash and cut into rings. Set aside a few rings for decoration, add the rest to the corn kernels. Mix eggs and buttermilk. Mix flour with baking powder and stir in. Season with salt and pepper and add the batter to the corn kernels. Mix everything well.

Wash remaining green onions and tomatoes. Cut scallions crosswise into 2-3 pieces and put them with tomatoes on a baking sheet or in a baking dish. Mix with sugar, vinegar, 2 tablespoons oil, salt and some pepper. Cook in a preheated oven at 180 °C /350 °F for approx. 15 minutes.

Meanwhile, heat remaining oil in a frying pan. Add 2-3 tablespoons corn mixture to hot fat and fry each side for 3-4 minutes over medium heat. Dab corn fritters with paper towel, arrange on plates with vegetables and garnish with remaining scallions.
