1 garlic clove
3 eggs
3 ½ ozs flour
1 onion
½ bunch parsley
4 Tbsps vegetable oil

Preparation steps

Drain corn well. Peel and mince garlic. Combine eggs and garlic in a bowl. Whisk in corn. Peel and dice onion. Pluck parsley from stems and chop. Add onion, parsley and flour to corn mixture. Season with salt and pepper.

Heat oil in a pan. Spoon batter into pan, a tablespoon at a time, flattening to create a pancake shape. Cook until golden brown, flip, then remove when both sides are golden brown. Drain on paper towels. Repeat until all batter is cooked. Serve warm.
