- 1 can Corn (10 ounces, drained)
- 1 garlic clove
- 1 small onion
- 2 eggs
- 2 stalks parsley
- 2 ozs Pastry flour
- salt
- peppers
- 2 Tbsps Canola oil
- 8 Cherry tomatoes

Preparation steps
1.
Drain corn in a sieve.
2.
Peel and mince garlic and onion. Beat eggs in a bowl. Rinse parsley, shake dry, pluck leaves and mince.
3.
Combine eggs garlic, corn, onion and parsley. Mix in flour and season with salt and pepper.
4.
Heat the oil in a pan. Add dough, a tablespoon at a time, and cook until golden brown on both sides. Repeat until all dough is cooked.
5.
Rinse cherry tomatoes and serve with cakes.
