2 Red onions (finely chopped)
½ cup olive oil
2 Tbsps Red wine vinegar
½ bunch Basil (leaves shredded)

Preparation steps

1.
Drop the tomatoes into a bowl of boiling water for 30 seconds then remove the skins.
2.
Cut the tomatoes in half, remove the seeds and chop the flesh, reserving the juice.
3.
Mix the chopped tomatoes and juice with the chopped onions, olive oil, vinegar and basil and season with salt and pepper.
