Diced Chicken Pitta Sandwiches
In a bowl, mix the yoghurt with a few dashes of orange juice and stir until smooth. Add the cucumber, tomato, apple and chicken and mix together. Add the raisins and season to taste with salt and ground black pepper. Add the lettuce and mix briefly.
Toast the pitas quickly if desired and fill with the salad. Put in a lunch-box until lunchtime.
