20 King prawn (ready to cook; peeled and deveined up on the tail segment)
1 Tbsp freshly chopped cilantro
1 Tbsp ground paprika (hot)

3 Tbsps Rice flour
2 egg whites
120 grams Bread flour

Preparation steps

Rinse shrimp and pat dry. Add flour to a bowl and season with coriander leaves, paprika, salt and pepper. Dip shrimp in flour mixture and then pull through beaten egg whites. Bread with panko crumbs. Heat oil in a pan and fry breaded shrimp until golden brown, about 2-3 minutes each. Drain on paper towels.

Serve shrimp in bowls or small pouches made of parchment paper. If desired, serve with a sweet chili dipping sauce.
